Tuesday, October 22
- Welcome introduction and state report highlights: State PIs and the group advisor provided updates on individual, department, college, university, and state-level changes and announcements.
- USDA Overview: Dennis Savaiano, Administrative Advisor
- Research & Grant Planning – Objective 1: Dissemination and implementation of Healthy Campus Research Consortium (HCRC’s) tool suite that utilizes a policy, systems, and environment (PSE) approach for campuses. Discussed the idea of obtaining grant funding to support outside entities to host and manage tools. Received a USDA conference grant to host the HCRC Conference to disseminate the group's tools. The virtual HCRC conference was held and hosted by the University of Tennessee in Nov/Dec of 2022. However, the follow-up survey is still in its final development stages to measure the attendees' use of tools post-conference.
- Research Planning—Objective 2: The goal is to create a toolkit for the community (in a needs assessment). Various toolkits are available for assessing a community's health and safety. They provide structured methods for gathering and analyzing data to inform interventions and policy changes, an opportunity for scoping review publication.
- Group work to look through items on BEPS items to cut the list down before final wordsmithing and testing.
Wednesday, October 23
- Research Planning- Objective 2: Healthy Campus (for community) Environmental Audit (HCEA) – create asynchronous training for users without being too involved in the long-term using a web-based automated platform. Plans to beta test audits on seven campuses.
- Future Research Plans/Funding Mechanism Ideas/Next Five-year Planning: Explore funding opportunities, including future funding from the NIH and USDA AFRI. Significant areas of interest for the following five-year objectives include food as medicine, the environmental connection to mental health, incorporating clinical/biochemical indicators along with subjective data collection in community-wide interventions, women’s health, social media, campus food service, and just-in-time adaptive interventions.
- USDA NIFA update: Kris Grimes. Upcoming grant cycles and overview of funding areas.
- Leadership & Committee Assignments & P&P: Policies, Procedures, and Reports; Information, Data, and Outputs; and Program Planning. Discussed state report content/format, annual reporting requirements and due dates, member expectations (definitions and terms), and potential changes to policies and procedures document. Create and approve the Emeritus Status for the group.

- Research Planning- Objective 3:
- (Development of FI survey tools) - Cognitive interviews will be conducted with food secure and insecure to validate correctly. Confirmatory analysis on Fall data and EFA on Spring data. Confirmatory analysis on Fall data and EFA on Spring data.
- (Mental Health) - added to the objective due to lack of tools and information on mental health and food security; collaborate with objective 4 to look at HCRC existing data for associations of diet quality/patterns and indicators of mental health and a model of the relationship between latent classes of diet and lifestyle behaviors and mental health.

- Research & Grant Planning- Objective 4: (Bridging Previous Works & Data Sets) - Themes from Published Multi-State Dataset findings – reviewed lists of published work from all previous annual reports – Obesogenic Environment and Policies; Campus Walkability and Bikeability; Dining Environment (and variability); Food Store Access; Health-related campus Ads; Nutrition Interventions and outcomes; stress and lifestyle factors; eating behaviors and disorders; metabolic disorders; economic impact and food choice; food security and access. Next Steps: Longitudinal analysis on individual FRUVED or integrated datasets.
- College longitudinal data collection: Agreement to focus on low-hanging fruit and collect data from our classes yearly to ensure we have incoming cross-sectional data to analyze. Variables would need to be consistent across campuses. It can be written into the new objectives if need be.
- Short HEI: Only validated with a young adult population, and people want and use it in all populations it is not validated in. Next steps – expand use in a broader adult population. Phase 1 – sHEI validation; Phase 2 – mobile app and learning module; intended users in the adult population to get instant feedback on their diet quality; Phase 3 – Pilot Study.
- Rapid Orals: students from PI universities presented 5-minute oral presentations on topics related to the group's work.
Accomplishments
Accomplishments
Target Audience: Young adults, university campus communities, and urban and rural communities experiencing low income.
Accomplishments: The overarching goal of this multistate project is to support college campuses and other communities in creating environments and opportunities that embrace young adults’ unique barriers to a healthy lifestyle, promote healthier weights, and reduce health disparities among vulnerable members. This project uses a community-based participatory approach (CBPR). Involving the community directly in the research process helps the community gain awareness of and interest in the issues that must be addressed to prevent obesity in young adults successfully. This year, the research collaborative group is made up of 17 universities. The research impacts from this group have the potential for extensive healthcare cost savings. Additionally, this work has increased awareness regarding the importance of environmental support needed for healthier choices with stakeholders such as university administrators, faculty, staff, and students. Output includes 15 publications, 28 abstracts, 35 presentations, and 2 master’s theses.
HCRC Research Objective 1: Training approaches and materials for disseminating the toolkit and its components were developed. A data set of communities using the health promotion tools, issues associated with using the tools, and findings from assessments gathered in communities are available for analysis.
HCRC Research Objective 2: Using exploratory and confirmatory factor analyses, a community Behavioral Environmental Perceptions Survey (BEPS-community) was refined to measure community perceptions of the environment’s support for healthful behaviors. The refinement of this survey can inform stakeholders in peer and administration groups and allow them to target healthy behaviors to nudge this population. In addition, the community HCEA audits can objectively measure a community’s support for healthful behaviors.
HCRC Research Objective 3: Using exploratory and confirmatory factor analyses, survey tools were developed to assess college students' food security and mental health status. The HCEA will be expanded to include assessments that capture food security and mental health resources on college campuses. These tools can inform stakeholders and administration on college campuses and identify areas where resources should be allocated to better students' health. While the survey tools assess college students’ reported behaviors and perceived environment, the HCEA tool can objectively measure how supportive the college environment is for healthful behaviors.
For the work to understand college students’ dietary patterns considering social determinants of health and influential disruptive factors (IDFs), the following was completed:
- Conducted 25 cognitive interviews with college students to explore the need to change the 10-item USDA Food Security Module.
- The current 10-item USDA Food Security Module was modified based on cognitive interviews and expert panels. A 12-item survey was developed, consisting of two food security and nutrition security scales.
- Distributed the modified survey to test for reliability and validation.
HCRC Research Objective 4: Data collection is ongoing and extensive and includes information related to the food environment, food security, health, perceived stress, nutritional perceptions, and dietary history questionnaires. Additionally, participants undergo a range of assessments, including:
- Anthropometric and cardiometabolic Measurements: This includes weight, BMI, waist circumference, adiposity, endothelial function, blood pressure, and various blood indices such as glucose levels, lipid profiles, metabolic hormones, and metabolomic profiles.
- Stool Collection: Stool samples are collected to assess the gut microbiome.
- Subjective Appetite Measurements: This involves gauging participants' subjective appetite perceptions.
- Physical Activity Assessment: Physical activity levels are assessed.
Currently, there are active participant recruitment and data collection phases. Data analysis will commence after the completion of data collection. In parallel, active work integrates data from previously completed studies, including YEAH, WebHealth, and Fruved, utilizing advanced data analytic techniques. The group will continue statistical exploration of the associations among the following weight-related factors: dietary and exercise behaviors, coping with stress, sleep, within-meal eating behavior, susceptibility to emotional eating and external cues and cognitive restraint, personality, relationship with parents, current parental status, income level, and ethnicity. Continued work and products can be derived from the multistate team’s large data sets using this big data approach.

Impacts
- This work has increased awareness among stakeholders such as university administrators, faculty, staff, and students regarding the importance of environmental support for healthier choices.
- Supporting healthy behaviors in young adults can have long-lasting effects on physical and mental wellness. Reducing the risk of chronic diseases like obesity, heart disease, hypertension, and type 2 diabetes can lessen the burden on the healthcare system.
- Investigating young adults’ eating behaviors, lifestyle choices, and perceptions has never been more important or urgent to reduce the burden of illness, increase the quality of life, and improve the societal impact of obesity.
