PLAN: American Samoa
- Aifili has interest in using CHL data for assessment of opportunities
- Using sterno (heat source)
Jeannie: What type of lettuce for climate/heat tolerance? - Green leaf possibly, but unsure
Tanisha: Perhaps frying okra (or beets) could be an opportunity for providing a use for the vegetable that doesn’t have sliminess, and may not be as good as other cooking methods, but perhaps an alternative to chips

● Yes. Will work with available recipes, but need to adapt
Travis: Discussion about temp-ing milk for kefir
Melissa: Encouraged not to evaluate? Privacy or difficulty issue?
● Would be difficult to get data to evaluate at that level.
SUGGESTION: for Multistate

Logistics
Ideas for collaborative work
Must meet MultiState Objectives:
1. Develop and disseminate CHL child obesity policy, systems, and environmentally focused multi-level prevention training and social marketing materials for the Pacific region.
2. Facilitate use of CHL and other relevant and available data, findings related to child obesity and its multilevel (policy, system, and environmental) determinants.
What needs to be done for the EFNEP data analysis for HEI?
SUGGESTION (Marie): Having one “big thing” (by vote) we work on; Objs are kinda broad and so much can be considered “under” them
- SUGGESTION: teamwork; all hui together on one subject to get it done
Examples: BUT need to have a research component and a theme (bonus would be: useful esp to extension)
- Using CHL data to identify dietary components and gaps to fill repository needs
- Class evaluations
- iCook 4H w/Leslie & Melissa
PROJECT 1:
ACTION: Develop a methodology for creating kid-friendly, healthy food (e.g., snacks, meals) recipes based on “Signature Foods” specific to each jurisdictions in CHLN to add to a shared

Plan/Suggestion/Action/ Decision repository for use (e.g., the Hawaii foods website)?
- Leads: Monica Esquivel; Travis Flemming
- RQ: What are the methods? How to recruit recipes? Sensory evaluation? Feasibility? What is the nutritional analysis?
CRITERIA & Goals for next year:
- Start with easy foods (e.g., bananas)
- standardize the sizes (e.g., proper comparisons)
- Kid-friendly recipes - opportunity for taste testing (professionally at Annual Meeting or locally)
- Event Demos
- Food safety, storage, preparation tips included
- Highlight the place where this recipe comes from
- Type of food or recipe is jurisdiction specific and appropriate (e.g., pepperoni rolls in WV, no oatmeal in Pohnpei)
- Develop criteria for SUITABILITY for target audience (e.g., time and labor and resource requirements)
- Writing up a protocol (scientific contribution)
SUGGESTIONS:
- Utilize institutional courses and students
- Hawaiiʻs dietetics students are doing food analysis using the different tools
- EFNEP and SNAP-ed educators & Food Demos
- UHMʻs Experimental foods course
- CHL FS trainees
- Multimedia Promotion - Use videos & pics; college/program promotion;
- Materials for evaluation
